For Tchelly, who is originally from the state of Para\u00edba in Brazil&#8217;s Northeast, consciousness about food waste was always an aspect of life. \u201cIn Para\u00edba, it\u2019s common to plant, harvest, and use food to its full extent, so people don\u2019t throw food away,\u201d Tchelly describes.<\/p>\n<p><a href=\"http:\/\/www.rioonwatch.org\/wp-content\/uploads\/2018\/07\/ReginaTchelly-e1531270411114.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter wp-image-44980 size-content\" title=\"Regina Tchelly. She noticed that many people in Rio did not know how to manage their own consumption. \u201cThe first thing that really caught my attention here in Rio de Janeiro was the quantity of food waste at outdoor markets,\u201d she recalls.<\/p>\n<p>Knowing that she wanted to make a change, in 2011 Tchelly applied for a R$10,000 (US$2,500) grant from\u00a0<a href=\"http:\/\/bit.ly\/12akQim\" target=\"_blank\" rel=\"noopener\">Ag\u00eancia de Redes para a Juventude<\/a> (Networks for Youth Agency), an initiative <a href=\"http:\/\/bit.ly\/1nnSjMv\" target=\"_blank\" rel=\"noopener\">that provides training and resources for young people to develop<\/a> community-based projects in Rio de Janeiro. Although her project was approved in the initial stages, Tchelly was not ultimately selected as a grant recipient.<\/p>\n<p><img decoding=\"async\" class=\"alignright wp-image-44984 size-medium\" title=\"Regina Tchelly in Paris. Less than a month later, from her house in Babil\u00f4nia\u00a0in Rio&#8217;s <a href=\"http:\/\/bit.ly\/1pfz23A\" target=\"_blank\" rel=\"noopener\">South Zone<\/a>, she started Favela Org\u00e2nica\u2014a project that seeks to reduce waste and change people\u2019s relationship with food. \u201cI started with R$140 (US$35) and six mothers,\u201d Tchelly describes. The community supported her efforts and attended her workshops: \u201cThe second week there were ten [mothers], the third there were fifteen, the fourth there were forty, and so the project grew.&#8221;<\/p>\n<p>Today, with more than 500 unique recipes, it\u2019s not just Rio\u2019s community that gets nourished by her food. Tchelly receives volunteers from other favelas in Rio, other cities in Brazil, and from around the world. She has given workshops and talks abroad in France, Italy, Argentina,\u00a0and Uruguay, in addition to participating in events like the <a href=\"http:\/\/bit.ly\/2PgsQil\" target=\"_blank\" rel=\"noopener\">Rio+20 United Nations\u00a0Conference on Sustainable Development<\/a>\u00a0as part of the <a href=\"http:\/\/www.bit.ly\/FavelaModelo\" target=\"_blank\" rel=\"noopener\">Favela as a Sustainable Model film<\/a> produced to premiere at the conference in 2012.<\/p>\n<p>In 2017, Tchelly even launched her own television show on Canal Futura, <em><a href=\"http:\/\/bit.ly\/2NFIr6g\" target=\"_blank\" rel=\"noopener\">Amor de Cozinha<\/a><\/em>\u00a0(&#8220;Cooking Love&#8221; or &#8220;Love to Cook&#8221;)\u2014reflecting her accomplishment in being recognized as a worldwide reference for sustainable consumption.<\/p>\n<p><iframe src=\"https:\/\/www.youtube.com\/embed\/j6VH0W_uSUI\" width=\"620\" height=\"349\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><span data-mce-type=\"bookmark\" style=\"display: inline-block; width: 0px; overflow: hidden; line-height: 0;\" class=\"mce_SELRES_start\">\ufeff<\/span><\/iframe><\/p>\n<p>Despite the project&#8217;s international success, Favela Org\u00e2nica\u2019s roots remain firmly planted in Rio&#8217;s Babil\u00f4nia and neighboring\u00a0<a href=\"http:\/\/bit.ly\/WJPjDT\" target=\"_blank\" rel=\"noopener\">Chap\u00e9u-Mangueira<\/a> favelas. Favela Org\u00e2nica\u2019s workshops teach both adults and children creative methods of cooking to enjoy food in its entirety and to make compost with the truly unusable parts. Workshop participants learn to use commonly discarded parts of fruits and vegetables\u2014such as peels, stalks,\u00a0and seeds\u2014in recipes. \u201cThe mission is to alter people\u2019s relationship with food. To see that peels, stalks, and seeds are food, real food,\u201d Tchelly says.<\/p>\n<p>The project also includes gatherings featuring a buffet of dishes made with Tchelly&#8217;s recipes. Her inspiration for creating recipes comes from her belief in working with what she has on hand: \u201cIf I have watermelon rind, I\u2019ll use it. If I have papaya peel, I\u2019ll use it. If I have a banana peel, I\u2019ll use it. Photo: Alan Miguel Gonc\u0327alves, Facebook\" src=\"http:\/\/www.rioonwatch.org\/wp-content\/uploads\/2018\/07\/FavelaOrga\u0302nicaBuffet-620x264.jpg\" alt=\"\" width=\"620\" height=\"264\" \/><\/p>\n<p>Sometimes people even think that her vegetable dishes taste as though they contain meat. \u201cIt\u2019s great when people eat risotto made with watermelon rind that appears to be shredded chicken\u2014or when they eat cappelletti made from pumpkin peel, which they think is shrimp,\u201d said Tchelly, laughing.<\/p>\n<p>Another part of Favela Org\u00e2nica\u2019s mission is to preserve and revitalize enjoyment in food. \u201cWe have to revive what was done in the past, where everyone met to cook and eat and talk about food,\u201d Tchelly says.<\/p>\n<p><a href=\"http:\/\/www.rioonwatch.org\/wp-content\/uploads\/2018\/11\/Workshop-Favela-Orga\u0302nica.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-48666 size-content\" title=\"Favela Org\u00e2nica workshop for children. Each week she receives leftovers from farmers markets that would otherwise be discarded. She also buys directly from producers and uses vegetables from community gardens in Babil\u00f4nia.<\/p>\n<p>Tchelly\u2019s food is not only full of flavor but it is also healthy. Jo\u00e3o Batista, 61, is from Chap\u00e9u-Mangueira\u00a0and started working with Favela Org\u00e2nica three years ago, teaching courses about growing vegetable gardens. After retiring, Favela Org\u00e2nica gave him an opportunity to do different activities to help both himself and the community. Working with Favela Org\u00e2nica taught him to eat more vegetables and consume less salt, sugar, oil, and fat. \u201cI make the foods that I learned here,\u201d Batista said. \u201cThis is also good for my health.\u201d<\/p>\n<p><a href=\"http:\/\/www.rioonwatch.org\/wp-content\/uploads\/2018\/07\/Joa\u0303oBatistaAndRegina-e1531270165603.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-44978 size-content\" title=\"Jo\u00e3o Batista and Regina Tchelly in Babil\u00f4nia.
